Kai Yat Sai (Thai Stuffed Omelette) 

Ingredients required:

• Eggs 6 nos• Fish sauce 2tsp• Tomato Ketchup 1 tbsp• Palm Sugar 1tsp• White Pepper powder 1/2 tsp• Garlic 5 cloves finely chopped• Onion 1 medium size finely chopped• Minced Chicken or Pork  250 gms• Tomato 2 medium size chopped• Bell Peppers 1/4 cup chopped• Cooking oil 2 tbsp• Spring onion chopped for garnish• Kosher salt as required
Take a mixing bowl, add fish sauce, tomato ketchup, sugar, white pepper powder, mix well all together and keep aside. Heat a pan on medium flame. Pour oil and once it’s hot, add chopped garlic, onion and saute till it’s translucent. Add minced chicken / pork and saute Add now the prepared sauce mixture. Add chopped tomato, bell pepper and salt and saute for about 3 minutes and keep aside for further usage. 
Break eggs, whisk properly and prepare omelette. Fill it with the meat cooked and the scallions. Fold from one side to another. Repeat same from other end. Fold other two sides to make an envelope* look like. 

*Here I have just closed to one side.
